Agave Ginger Roasted Pork

   1/4 cup agave
   2 tablespoons cider vinegar
   2 tablespoons fresh grated ginger root or ground ginger
   2 to 2 1/4 pounds boneless skinless pork loin roast, whole

Agave Ginger Roasted Pork is from the Cook'n with Agave collection.

Combine agave, vinegar and ginger; mix well. Sprinkle pork with salt and pepper; brush generously with agave mixture. Bake at 325°F about 1 hour or to 170 degrees internal temperature. Brush with agave mixture every 15 minutes. Let stand 10 minutes before slicing.
